It’s legal and permissible to decline to assist passengers, you will just have to move to a different seat. You should be honest and say no, there is nothing wrong with that, but you cannot stay in the exit row and decline. Just Let them put you in a different seat.

The main issue I see with someone her size flying is that if there is an emergency she could get stuck in the aisle and people couldn’t get past her. It’s definitely a safety hazard.
